Intense physical exercise is always associated with increased production of toxic oxygen by-products in the body, potentially contributing to muscle fatigue and, ultimately, under-performance in athletes of all levels. There are two ways to counteract the harmful effects: regular training that overexpresses antioxidant defenses, and a healthy diet that provides all those precious antioxidants such as vitamins C and E, carotenoids, the little-known polyphenols and certain trace elements. In this book, the authors offer an anthology of simple recipes, each as tasty as the next, and well suited to the needs of athletes of any level. The emphasis is on the colour of foods, which is closely linked to their antioxidant content, particularly polyphenols. Each of the 42 recipes has been nutritionally analysed and commented on by the three authors, all antioxidant food enthusiasts: Manon Liégeois, Luc Stevens and Joël Pincemail.
