Eileen Bergin is the founder of the Butler’s Pantry (1987) chain of gourmet food shops in south Dublin and north Wicklow. The Butler’s Pantry is one of Ireland’s best-known artisan food retailers. After a brief ‘retirement’ in 2010, Eileen returned to the food business in 2011 when she opened The Merrion Tree in the heart of the area where she grew up.
